Boil soya chunks in water with salt in it. Once cooled wash, drain and squeeze the soya chunks.
Take another bowl, add rice flour, red chilli powder, turmeric powder, coriander powder and salt. Now, give it a toss.
Next, add lemon juice and soya chunks and mix it well. Sprinkle some water if required. Keep it aside for 10 minutes to marinate.
Take oil in a frying pan. Once it is hot, add curry leaves, vertically cut pieces of ginger and garlic. Saute well till they are golden in color.
Now, add the marinated mixture of soya chunks. Put a lid and allow vapor to form.
Remove the lid and keep stirring till it becomes crispy on a low flame.
Serve these Crispy Soya Chunks with finely chopped coriander on it.
